
Breakfast burrito filled with fiesta potatoes, cheese, and hot sauce.. YUM!!! We went to the poconos one winter with our friends, and our cali friends made breakfast burritos and we fell in love with them. I have been making variations on breakfast burritos for a long time now, but this one hits it out of the park. Well at least I think so.. I love breakfast burritos because they are so filling and filled with protein. You can use lots of veggies in there as well. I didn’t have spinach on hand but chopped spinach would be great in this as well. Avocado slices would be great in this. You can really add anything you want in it and make it your own.
Make extra fiesta potatoes and use them in your breakfast the next day. Also you can eat the omelette as is as well. I have a masala omelette recipe in my highlights on instagram as well. Hope you guys like this breakfast/ brunch recipe! Tag me @zheelicious when you make it. 🙂

Ingredients:
- 2 burrito tortillas
- 4 eggs
- 1 small onion, chopped
- 1 red bell pepper, chopped
- 1 jalapeno, chopped
- 1 tbsp milk
- Fiesta potatoes
- Mexican blend cheese
- 1 tsp chili powder
- ½ tsp turmeric powder
- ½ tsp garlic powder
- Salt to taste
- Black pepper to taste
- Hot sauce of your choice, I used Taco Bell hot sauce.
Directions:

1. In a bowl mix eggs, milk, onions, red pepper, jalapeno, chili powder, garlic powder, turmeric powder, salt, and pepper. Mix until all the ingredients are incorporated.

2. Heat a small nonstick pan, add some ghee, pour half of the egg batter on the pan. When the eggs start to settle and there is no liquid left (about 2-3 minutes), flip the omelette, cook for another 2 minutes.
3. Warm up the tortilla, place the omelette on top, add potatoes and cheese. Drizzle the hot sauce, and fold into a burrito.
4. Cut in half and enjoy!!!
