Tulum Burrito


I know you guys have been waiting for this Tulum burrito recipe for so long. I’m sorry for the delay, but its finally here and I promise you it was deff worth the wait. Its a simple recipe with ingredients you have in your pantry and fridge, but it is oh so satisfying.

These Tulum Burritos were inspired from my trip to Tulum in feb. we had them at Burrito Amor & other places, they were soooooo good and felt super nourishing. You can make the rice & beans in advance. You can also use the left overs and turn them into tacos, enchiladas, quesadilla, or bowls. The choice is endless. Tulum Burrito

Ingredients:

  • 6 large tortillas ( I like to use toufayan brand wheat wraps)
  • 2 cans of Black beans
  • 1 cup Spanish rice 
  • 2 1/2 cups Water 
  • 10 oz can of rotel or 1 chopped tomatoes 
  • 1 white onion, chopped ( split in two bowls)
  • 2 garlic cloves, shredded
  • 1 cup mixed bell peppers, sliced 
  • 1 onion, sliced (I used white) 
  • 1 large tomato, chopped 
  • 1 red onion, chopped 
  • 2 jalapeño or seranos peppers, chopped
  • Lettuce, chopped    
  • Cilantro chopped 
  • Cheese
  • Salt to taste 
  • 1/2 tsp cumin seeds 
  • 1/4 tsp oregano 
  • 1/2 tsp garlic powder 

Directions:

Time needed: 35 minutes

Easy Burrito recipe

  1. For the Rice: Heat some oil in a pan, once hot add 1/2 of the white chopped onions, and let it soften.

    Once softened add garlic powder, a can of rotel, slat to taste, then Spanish rice. Mix well until everything is nicely mixed. Add water to it, bring it to a boil. Put the lid on and cook on low heat for about 8-10 minutes. Turn off the heat and set it aside until ready to use.

  2. Black Beans: heat some oil in a pan, add the other 1/2 of the white chopped onions, garlic cook until fragrant.

    Add the can of beans without draining the liquid. Then add cumin powder, garlic powder, and oregano. Mix well and cook for 5 minutes. Turn off the heat and set it aside until ready to use.

  3. Pepper & onion: Heat somme oil in a pan, add sliced peppers & onions, saute until they are nicely charred. Salt to taste.

    Turn off the heat and set it aside until ready to use.

  4. Make the burrito: On the tortilla add rice, top with beans, grilled peppers & onions, cheese, lettuce, tomato, onions, jalapeno or serano, cilantro. Fold the burrito.

  5. Grill the burrito in a pan on all sides.

  6. Enjoy with you fave hot sauce!!!
