

Times are so crazy right now, and while we are all quarantine and eating pantry heavy food. Just wanted to post a salad that you might be able to whip up. You might already have these ingredients in your fridge. You can use frozen cauliflower if you need to, and can also sub a hot sauce you have on hand instead of the buffalo wing sauce. It’s a forgiving recipe so you can use any greens you have on hand. Hope you all stay safe and healthy! Let’s hope all this settles down soon. It’s a scary time for most and we need to remember that we are all in this together. To stay human and kind to others in this tough time.

Ingredients:
- 1 head cauliflower, cut into florets
- 2 tsp all purpose flour (more if needed)
- ½ tsp garlic powder
- ¼ tsp red chili powder
- 1 cup buffalo wing sauce
- 1 avocado, sliced
- ½ onion, sliced
- 1/2 cup red cabbage, shredded (optional)
- Lettuce of choice, I used Romaine
- Chopped chives(optional)
- Salt to taste
- Black pepper to taste
Spicy Cilantro Ranch Dressing
- ¾ cup greek yogurt
- 1 tbsp chives, chopped
- 1 clove garlic
- ½ tsp mustard
- ¼ cup cilantro, roughly chopped
- 2 thai chilies
- ½ tsp olive oil
- 2 tsp onion powder
- ¼ tsp yellow mustard seeds
- Water as needed
- Salt to taste
- Black pepper to taste
Directions:
- In a blender, blend all the ranch dressing ingredients until it’s creamy and blended. Add water IF and as needed.
- In a large bowl mix cauliflower, garlic powder, red chili powder, and all-purpose flour. Then add buffalo sauce and toss untils it’s well coated.
- Air fry the cauliflower at 375 degrees for 10 minutes. Or you can bake at 400 degrees for 20 minutes (until golden brown).
- In a large bowl mix lettuce, cabbage, onion, and avocado slices. Then top it with the baked or air fried cauliflower.
- Top with the cilantro ranch and enjoy!
