
Have you been to CPK and tried their Chipotle pizza? well if you like that one then you are in luck this recipe is a copycat recipe from CPK chipotle Pizza. I have just used a flat bread to make it easier on me but you can alway use pre-made pizza crust. The Chipotle Flatbread Pizza is super easy to make and comes together in no time. You can make some of the components a couple days in advance and assemble the flatbread when ready to eat.
Here are some pointers:
- I get the flatbread from trader joes or Shop Rite, You can use ready made pizza crust as well.
- You can make chipotle sauce, avocado crema, and the black bean mixture a couple days earlier and store in the fridge separately.
- I use the Goya brand chipotle in adobo sauce,I blend the whole can and store it in an air tight container or freeze cubes of it.
- Some other recipes that calls for the chipotle in Four Bean Chipotle Chili, Chipotle Cauliflower Tacos.
- Some other recipe you can use the leftover avocado cream in, Chipotle Cauliflower Tacos, Achari Paneer Tacos, Black Bean Tacos.

Prep time: 15 minutes | Cook time: 10 minutes | Total time: 25 minutes | Makes: 2 Flatbreads |
Ingredients:
- 2 Flat breads
- 1 can (16 oz.) black beans
- 1 tomato, chopped
- 1/2 red onion chopped
- 1 jalapeño or serano, finely chopped
- 1 Thai chili, fine chopped (optional)
- 2 scallions, chopped
- 1 tbsp taco seasoning
- 1/2 tsp red chili powder
- Salt to taste
- 1/2 juice of lemon
- Cheese
Chipotle sauce
- 1 cup sour cream
- 1 tbsp chipotle adobo sauce (I use Goya chipotle peppers in adobo sauce and blend the whole can)
- 1 tbsp taco seasoning
- 1/2 tsp red chili powder
Avocado crema:
- 1 avocado
- 1 cup cilantro
- ½ lemon/lime, juiced
- ½ tsp cumin powder
- 2 garlic cloves
- 6 thai chilies (less if you don’t want it too spicy)
- 3 tbsp greek yogurt
- 2 tsp extra virgin olive oil
- Salt to taste
- Black pepper to taste
Directions:
Time needed: 25 minutes
Chipotle Flatbread Pizza
- In a bowl mix together black beans, tomatoes, onions, jalapeño, cilantro, scallions, Thai chili, salt, taco seasoning red chili powder, and lemon juice.
Mix everything well and set aside.
- In a different bowl mix together everything for the chipotle sauce.
Set aside until ready to use.
- In a blender blend together everything for the avocado crema , add water as and if needed.
Set aside until ready to use.
- On the flatbread spread the chipotle sauce evenly, top with cheese, onions and jalapeños. Bake for 5-6 minutes at 400 degrees or until the cheese has melted and the flatbread is crispy.
- Top the flatbread with the bean mixture, then drizzle some avocado crema on top, more scallions.
