Tostada Flatbread


Are you a fan of CPK (California Pizza Kitchen)?? I love that place, we used to go there growing up and it was such a treat. We would always get the tostada pizza, it was a fam fave. Recently they took that off the menu, well you know I love recreating restaurant recipes at home. I recreated the Tostada pizza recipe but made into a flatbread bc I had flatbread that I need to use up. It’s a great recipe for a quick dinner or when you are entertaining/ hosting. Makes for a great app item or mains.

Prep time: 10 minutesCook time: 20 minutesTotal time:30minutesMakes: 4 servings

Ingredients:

  • 1 flatbread or pizza crust 
  • 1 tsp oil 
  • 1 can of black beans
  • ½ onion, chopped
  • 1 garlic clove, shredded
  • 1 jalapeno, chopped 
  • 2 tbsp salsa of choice 
  • 1 tbsp taco seasoning 
  • Cilantro, chopped 

Toppings :

  • Lettuce, shredded 
  • 1 cups of shredded cheese 
  • 1 jalapeno, chopped 
  • 2 green onions, chopped 
  • ¼ onion, chopped 
  • Cilantro, chopped (optional)
  • Tortilla strips

Ranch:

  • ½ cup greek yogurt or sour cream
  • 1 tbsp ranch seasoning 
  • ½ lime juice 
  • ½ tsp garlic powder 
  • Cilantro, chopped finely

Directions:

Time needed: 30 minutes

  1. In a pan, heat some oil, add onion, garlic clove, and jalapenos. Cook for 2-3 minutes until all the veggies are softened. Add Salsa, taco seasoning, and cilantro.

    Mix well and cook for 1-2 minutes. Blend all the beans with an emerging blender and set aside until ready to use.

  2. In a bowl mix together all the ingredients for the ranch, set aside until ready to use. 

  3. On a flatbread spread the beans evenly on the flatbread. Top it with cheese, and bake in the oven for 350 degrees for 5-7 minutes or until the cheese has melted.

  4. Once the flatbread is out of the over top it is off with the following: lettuce, jalapeno, green onions, onions, cilantro, tortilla strips, and a generous amount of ranch.

  5. Cut the tostadas into 4-5 pieces and ENJOY!!! 


Notes:

  • I bought the flatbread from Trader joe’s, you can use a store bought pizza crust or make at home if you like.
  • Toppings are all optional but recomended
  • You can use store bought ranch as well to make things even quicker.
  • I found the tortilla strips at ShopRite in the salad toppers aisle, you can use crushed tortilla chips or skip completely.
