Mexican black bean burger

with spicy chipotle queso and baked jalapeno coins

WOW now that’s a really long name, I bet that’s what you are thinking! But let me tell you all the AMAZINGNESS that is this burger. Let’s start with the patty, it’s home-made so I can control what goes in it and how it taste, I bet after you make these you won’t buy store bought patties because this is SOO flavorful. The baked jalapeno coins are everything, it’s spicy, crunchy and soooo good…to be honest I snack on them. The chipotle queso is not homemade because well why do all the work when you can get it ready-made! Once you jazz up the store bought queso with my tips, you will want to drink it, but please don’t… I mean if you really want to then do you!

You guys this burger is literally what dreams are made of, well at least mine are! This dish comes together in under 30 minutes. Make extra patties so you can freeze them and always have on hand to help speed up the dinner making process! The left over queso is good for nachos or even a quick snack with chips. You can add any other fixins you like; the sky’s the limit! Hope you all enjoy it!

Prep time: 15 minutesCook time: 10 minutesTotal time: 25 minutes

Ingredients:

  • 4-6 hamburger rolls
  • 2 cans black beans
  • 8 oz. can of corn
  • 1 onion, chopped
  • ½ green bell pepper, chopped
  • ½ red bell pepper, chopped
  • 1 jalapeno, chopped
  • ½ cup oats flour
  • ¼ cup bread crumbs
  • 1 egg
  • Handful of cilantro
  • 1 tbsp taco seasoning
  • 1 tsp red chili powder
  • 1 tsp cumin powder
  • 1 tsp cumin coriander powder
  • Salt to taste

Jalapeno coins:

  • 2-3 jalapenos, sliced
  • ¼ cup bread crumbs
  • 1 egg, beaten

Spicy Chipotle Queso

  • 1 jar of your favorite queso
  • 1 small onion, chopped
  • 1 jalapeno, chopped
  • ½ red bell pepper, chopped
  • ½ green bell pepper, chopped
  • 1 tsp taco seasoning
  • 1 tsp red chili powder
  • 1 tbsp chipotle adobo sauce

Toppings:

  • 1 tomato, sliced
  • 1 onion, cut into thick slices
  • ½ cup of your favorite salsa
  • ½ head lettuce

Directions:

  1. For the patty: In a large bowl smash the beans, add all the veggies, beaten egg, oat flour, breadcrumbs, and seasonings and mix well. Form into patties and set aside until ready to use.
  2. For the jalapeno coins: pre-heat the oven to 400 degrees. Dip the jalapeno slices into the egg then coat with breadcrumbs. Lay them on a foiled baking sheet (makes clean up easier if its foiled) spray the coins with cooking spray and bake them for 10-15 minutes. Keep a close eye on them and flip them half way through for even cooking. Set-aside until ready to use.
  3. For the queso: in a bowl mix all the veggies and seasonings into the jarred queso and microwave it for 1-2 minutes.
  4. In a large pan drizzle add some EVOO then the onions and sprinkle salt and pepper and cook for 2-3 minutes on medium heat. Set-aside until ready to assemble the burger. (This step is optional, but recommended)
  5. In a large pan spray add some cooking spray and grill the patties. Cook the patties on medium heat 3-4 minutes on each side.
  6. To assemble the burger: toast the burger rolls, lay some lettuce on the bottom bun, top it with tomatoes, onions, the cooked patty, baked jalapeno coins, queso, and salsa close the bun and ENJOY!!!!!

Notes:

  • To make the oat flour, I use whole oats and just grind them in my magic bullet.
  • You can add any veggies and toppings you like to the burger to make it your own.
  • I cook all the patties and then freeze the leftovers.
  • You can totally use store bought patties if you don’t have the time to make yours at home.
  • I use Tostitos brand queso.
