
If you have been following me for a while you know how much we love our mexican food at home! We eat it so often & the kids also love it, so it’s a big win for me. I love how I can make these mexican bowls in under a half hour! I also make extras of the rice, beans, and veggies to use throughout the week for meals. To save time and effort I prep these bowls and add them to my FoodSaver® Microwavable Meal prep bags. It makes my meal time cut into minutes. Prep time: 10 minutes | Cook time: 20 minutes | Total time: 30 minutes | Makes: 4 servings |
Ingredients:
- 2 cans black beans, rinsed and drained
- 1 onion, chopped
- 1 jalapeño, chopped
- 3-4 garlic cloves, chopped
- 1 tsp cumin seeds
- 1 tbsp taco seasoning
- 1 tsp red chili powder
- ¼ cup jarred salsa
- Salt to taste
- Cheese as needed
- Cilantro (optional)
Cilantro Lime Rice:
- 1 tablespoons butter
- 1 tsp olive oil
- 1 cup basmati white rice, rinsed
- 1 tsp cumin seeds
- 1 cups water
- 1 teaspoon salt
- 3 tablespoons lime juice
- 1 cup cilantro, chopped
Fajitas:
- 1 tsp olive oil
- 1 onion, sliced
- 1 large pepper sliced
- 1 tsp cumin seeds
- ½ tbsp taco seasoning
- Salt to taste
Toppings (optional):
- Tomatoes, chopped
- Onion, chopped
- Cilantro, chopped
- Sour cream/ greek yogurt
- Hot sauce of choice
- Tortilla strips
Directions:
- Cilantro Lime Rice: Heat your instant pot on suate mode for 2 minutes, once hot add butter, then cumin seed, and rice. Toast the rice for a minute or two. Then add water, salt to taste, and pressure cook on high for 5 minutes.
Let it natural release. Open the lid, add olive oil, lime juice, and fluff the rice with a fork. Let it cool down, add the chopped cilantro and mix well. Set aside until ready to use.
- Black Beans: In a pan, heat some olive oil.Once the oil is hot add the cumin seeds followed by onions and cook until softened (2 minutes). Next add garlic, and jalapeño let it cook for an additional 2 minutes. Add salsa and a splash of water then add taco seasoning, red chili powder, and salt. Add the beans and cook until they are heated through (2 minutes or so).
Set it aside until ready to use.
- Fajitas: In a pan, heat some oil, add cumin seeds, then add the onions and peppers and cook for a minute. Then add taco seasoning and salt, and cook for an additional minute or two.
Set it aside until ready to use. - Assemble: Add your rice, top it with beans, fajita, cheese, and then top it with all your favorite toppings
