Taco Bell’s Gordita Crunch copycat, trust me you won’t miss taco bell with this one!! It is so simple to make at home. I especially love the spicy ranch sauce, you can use this in my other taco bell recipes as well like: Mexican Pizza, Baja Chalupas. You all know my love for taco bell is so real. I’m going to try and make most of their recipes at home, you all love it, we love it as well so it’s a win all around! 

Gordita crunch is basically a soft taco and a hard taco that is held together by cheese, filled with beans, lots of fresh veggies, and doused in the spicy ranch sauce. Quarantine has made me make so many take out and restaurant food at home, and I’m not mad about it!! A lot of these recipes are in our weekly rotations. Having it at home means we can truly control the quality of our ingredients. So I’m here for it!!! The Gordita crunch pairs so well with the Fiesta Potatoes.

Spicy Ranch

Prep time: 15 minutesCook time: 10 minutesTotal time: 25 minutesMakes: 5-6 servings

Ingredients:

  • 6 Kontos Greek flatbreads or flour tortilla
  • 6 hard taco shells  
  • 2 cans refried beans
  • 1 tbsp taco seasonings
  • 1 tsp red chili powder
  • 2-3 tbsp water
  • Salt to taste

Toppings

  • ½ head lettuce, shredded
  • 1 tomato, chopped
  • 1 small onion, chopped
  • 1 jalapeno, chopped
  • 2-3 spring onions, chopped 
  • Mexican blend cheese

Spicy Rancy

  • ½ cup mayonnaise (use vegan mayo to make it eggless)
  • 1 cup sour cream (you can use greek yogurt instead)
  • 1 pack of ranch dressing seasoning 
  • 1 jalapeno, shredded 
  • 1 tsp red crushed pepper
  • ½ tsp red chili powder or paprika
  • ½ lemon, juiced
Spicy Ranch

Directions:

  1. In a bowl add all the ingredients for the beans and mix really well. Microwave it for about 2 minutes.

    Set-aside until ready to use.

  2. In a bowl add all the ingredients for the spicy ranch and mix really well.

    Set-aside until ready to use.

  3. On the flat bread or tortilla sprinkle a good amount of cheese, toast it in the oven until the cheese has melted.

  4. Stick the hard shell right on top of the melted cheese, it should be one big taco now.

  5. Start layering your gordita crunch with bean, spicy rancy, cheese, lettuce, tomatoes, onions, jalapeno, and spring onion

  6. Top it with more cheese and spicy ranch if you wish!

  7. Devour with hot sauce!!!


Notes:

  • You can use Greek yogurt instead of sour cream in the spicy rancy to make it a bit healthier.
  • Use vegan mayo instead of regular to make it eggless.
  • I used knots brand flatbread, if you can find it use regular flour tortilla.
  • I used 5 cheese mexican blend from costco.
  • you can store the spicy ranch for upto 2 weeks in the fridge.
