Roasted Cherry tomatoes, simple yet packed with flavor! The cherry tomatoes are thrown on a sheet pan, covered in garlic, basil, evoo, red crushed pepper, salt, and pepper. Then they are baked until they release all their sweet juices and become char/ roasted.
They are garlicky, sweet, spicy, basil-y, tangy, and perfectly charred….I mean what’s not to love right!
These roasted tomatoes are SOOO versatile. They can be used in many different ways. I’m adding a list below of all the things you can use them on to give you some ideas/ inspo. I have a pappardelle burrata pasta recipe going up tomorrow that I used these tomatoes in. I love to have these in the fridge in the summer months, especially to throw them on to easy no cook/ light meals. I hope you all will enjoy these as much as I do. Things you can use these in:
- Pasta (will post this recipe tomorrow).
- On a cheese board.
- Slatter it on sourdough bread and top it will mozzarella
- Avocado toast
- Hummus toast
- In sandwiches or paninis
- You can blend this and make it a really simple but flavorful soup
- Have it as a part of your caprese salad with arugula, burrata, or fresh mozzarella.
- Pizza topping or flat bread.

Prep time: 5 minutes | Cook time: 20 minutes | Total time: 25 minutes | Makes: 5-6 servings |
Ingredients:
- 4 cups (3 pints) cherry tomatoes
- 10 clove garlic
- 4 tbsp good quality extra virgin olive oil
- 1 tsp red crushed pepper
- 2-3 leave fresh basil, torn
- Salt to taste
- Black pepper to taste
Directions:
- Preheat the oven to 400 degrees.
- In a sheet pan add all the ingredients and mix well. All the tomatoes should be nicely coated in all the ingredients.
- Roast the tomatoes in the oven for 25 minutes. Toss them around every 10-15 minutes.
- Once it’s done tear more basil on top. (optional) Serve with pasta, toast, cheese!
