
Cajun Potatoes, Thanksgiving is around the corner and we cant not have a potatoes right! I’m sharing the Cajun potatoes recipe some of you might have had this at BBQ nation in India. It’s a copycat recipe from there. Its sooo flavorful and delish. Easy to make and serve. you can make the cajun sauce in advance, even par boil the potatoes in advance. Prep time: 5 minutes | Cook time: 15 minutes | Total time: 20 minutes | Makes: 4 servings |
Ingredients:
- Bag of 1 lbs of mixed baby potatoes, washed.
- Drizzle of Olive oil
- ½ tsp red crushed pepper
- ½ tsp italian seasonings
- ½ tsp garlic powder
- ¼ red chili powder
- ½ tsp cajun powder
- Salt to taste
- Pepper to taste
Creamy Cajun sauce:
- ½ cup vegan mayo (follow your heart brand) (You can use regular as well)
- ½ tsp cajun seasoning
- ¼ red chili powder
- ¼ tsp oregano
- ½ Lime, juiced
- ½ tsp garlic powder
- 2 tsp of smoky tabasco (optional)
- 3 tbsp onion, finely chopped
- 2 green onions finely, chopped
- Black pepper to taste
- Cilantro, chopped
- 1 ½ tbsp water( more or less as needed)
Directions:
- Par boil the potatoes in salted water, until they are fork tender.
It should take 7-9 minutes.
- Drain the potatoes, then add them to a bowl, give them a good drizzle of olive oil.
- Add the red crushed pepper, Italian seasoning, garlic powder, chili powder, cajun powder, salt and pepper to taste. Mix until the potatoes are well coated.
- Put the potatoes on a baking tray, with the back of a glass or bowl smash the potatoes.
- Air fry the potatoes for 5-7 minutes at 350 degrees.
Until they are golden brown
- In a bowl mix together mayo, cajun seasoning, red chili powder, oregano, garlic powder, lime juice, tabasco sauce, black pepper, 2 tbsp of onion, 1 green onion, and cilantro. Water as needed.
Mix well and keep aside until ready to use.
- Take the potatoes out on a serving plate. Top it with the creamy cajun sauce. Then top it with the remaining chopped onions, green onions, and cilantro.

Notes:
- I used mixed baby potatoes from whole foods.
- I used vegan mayo, the brand i used is follow your heart. Also found at whole foods in the refrigerator section.
- You can use regular mayo as well.
