Ingredients:
- 6-7 frozen veggie dumplings, I use the @traderjoes ones.
- 1 can of coconut milk
- 1 cup vegetable broth
- 1 tbsp green curry paste
- 1 tsp oil, I use @choosefoods avocado oil
- 1 shallot, chopped
- 1 inch ginger, shredded
- 3 cloves garlic, shredded
- Handful of shredded carrots
- Bok choy, chopped (you can use spinach as well)
- Cilantro, chopped
- Scallions, chopped
- Chili oil (I use @tiger_moms)
- 1 tsp rice wine vinegar (optional)
- 1/2 tsp soy sauce (optional)
- Lime, optional
Directions:
- Heat the pot. Once hot, add oil, shallots, ginger, and garlic. Cook for a couple of minutes.
- Add green curry paste, cook for a minute. Then add coconut milk & vegetable broth.
- Add rice wine vinegar & soy sauce if using. Add carrots/ whatever other veggies you want.
- Let the soup come to a simmer, then add dumplings. Cook for 4-5 minutes (until the dumplings are cooked).
- Serve the soup, top with cilantro, scallions, chili oil, and lime wedge.
