Cheesy Bean & Rice Burrito

Taco Bell is probably every Indian person’s favorite fast food place. I have eaten way too much taco bell this pregnancy. I swear my baby may be made out of cheesy bean & rice LOL! If y’all haven’t had Taco Bell’s Cheesy Bean & Rice Burrito, you haven’t lived yet. Not to worry though, I’ve got you covered!!! This is my go to order at TB! So I had to make it at home so I can really see what’s going in my food. It’s basically a layered burrito with the ingredients being in the name: cheese, beans, and rice. And then of course grilled to perfection. Best part: If you have leftovers, make a quesadilla with all the ingredients the next day!

Hubby said it taste just like the taco bell one, which was a huge compliment. He is my biggest critic, so if he doesn’t approve a recipe it usually never goes up on the blog. Prep time: 10 minutesCook time: 10 minutesTotal time: 20 minutesMakes: 5 servings

Ingredients:

  • 5 large tortilla
  • 1 cup store bought queso
  • 1 cup Mexican cheese blend
  • 1 small onion, chopped
  • 1 jalapeño, chopped
  • 1 bell pepper, chopped
  • 1 tomatoes, chopped
  • 2-3 sprigs green onions, chopped

Rice

  • 1 cup rice
  • 2 cups water
  • ¼ cup salsa
  • 1 tsp red chili powder
  • 1 tsp taco seasonings
  • Salt to taste

Beans

  • 2 cans refried beans
  • 1 tbsp taco seasonings
  • 1 tsp red chili powder
  • 2-3 tbsp water
  • Salt to taste

Creamy Jalapeño sauce

  • ½ cup sour cream
  • 2 tbsp mayo
  • 1 tbsp taco seasonings
  • 1 tbsp taco bell sauce
  • 6-8 pickled jalapeño, finely chopped
  • 1 tsp of pickled jalapeño juice

Directions:

  1. In a pressure cooker, add all the ingredients for the rice and let it cook for about 4-5 whistles. You can do this in an instant pot as well, cook for about 10 minutes on high.
  2. In a bowl add all the ingredients for the beans and mix really well. Microwave it for about 2 minutes. Set-aside until ready to use.
  3. Mix all the ingredients for the creamy jalapeño sauce in a bowl, set-aside until ready to use.
  4. On a tortilla spread the cooked rice evenly, then beans, creamy jalapeño sauce, queso, cheese and all the veggies. Roll it into a burrito. Repeat until all the burritos are done.
  5. On a hot skillet grill the burrito on all sides until desired crispness.
  6. Serve hot with taco bell sauce!

Notes:

  • You can find taco bell sauce at Wal-mart!
  • I use Old El Paso brand re-fried beans; make sure you get the vegetarian kind.
  • I used McCormick’s or Old El Paso brand taco seasoning.
  • You can make the creamy jalapeño sauce with Greek yogurt to make things a little healthier.
